When you are plans are definite, use GOING TO. When you dream of doing something, use WILL.

When you’re talking about actions that are far into the future (months or maybe years from now), use WILL. When you’re talking about actions that you will do soon (tomorrow or next week), use GOING TO.

I will date her.
In these cases, both seem to have a very high level of certainty. As though no matter what, you will find a way to date her.

However,
"I'm going on a date with her."
This suggests you have already asked her out and she said yes. You have already planned it.
But
"I will go on a date with her."
This seems similar to "I'm going to date her/I will date her." It's like you have decided that you will ask her on a date in the future, but you haven't asked her yet.
