In "The Old Man and the Sea", Hemingway looks down into the water and sees "the red sifting of the plankton" which means he saw in the water moving glints of red from the plankton.
When Hemingway says "he had no mysticism about turtles" he means he knew them well, had no superstitions about them, and sympathised with them.
